I like to use granular sweeteners, but I’m sure you can also use liquid sweeteners. Just don’t use confectionery sugar substitutes or brown sugar substitutes. Those won’t work in this recipe.

Yes, you can freeze unsweetened macaroon biscuits. They will last for about 3 months in the freezer. Just follow these steps:
- Place them in a single layer on a baking tray lined with parchment or wax paper.
- Place them in the freezer for up to 3 hours or until they are completely frozen.
- Remove the baking sheet and place all the cookies in a freezer bag with a plastic lid.
When you’re ready to eat them, you can let them thaw at room temperature. Freezing them completely does not change their texture!

Prevent your screen from getting dark
Use kitchen paper to wipe a large bowl clean to make sure it’s free of greasy, otherwise your egg whites won’t be whipped to the top. Floss egg whites with sweetener, to form hard tops.
Add vanilla and coconut and mix gently to combine.
Line the baking sheet with a non-stick lining or baking paper. Roll (or tube) a teaspoon of the marzipan mixture into a small ball and place evenly on a baking sheet.
Bake at 180C / 350F for 10-12 minutes depending on oven and humidity.
Decorate with sugar-free chocolate (optional).
