This is the breakfast I recently made for the girls every time we got up Small house. I love that it has become a new ritual (which they love and ask for!). The last time we were there, my girls had friends with them (another group of sisters of the same age!), And all four of them FORGOTED Whole Wholegrain Pancakes and Cinnamon.

I don’t really know much about my friends’ eating preferences, and I’m glad I hit my head with an apple cinnamon. They all asked me to make more apples, and my oldest daughter kept saying, “These pancakes are delicious for some reason” (although I made them like I always do .. She must be really hungry!). πŸ™‚

For apple cinnamon

  • 2 tbsp butter
  • 2 apple, chopped and cut into a small dice (I like to use a mix of gala, Granny Smith and Golden Delicious)
  • 2 tbsp Pure maple syrup
  • 1 1/2 teaspoon Cinnamon


For pancakes

  1. Whisk flour, baking soda and salt evenly in a large bowl.

  2. In a separate bowl, beat butter, eggs and maple syrup, then pour into the bowl of dry ingredients.

  3. Carefully fold wet and dry ingredients together while melted in the melted butter, only until blended (do not mix too well). We mix the butter so it doesn’t harden when it comes into contact with cold ingredients. If this happens, it won’t mix together, but don’t worry, the recipe won’t be ruined.

  4. Heat one cast iron pan over medium to low heat and add a few teaspoons of butter to the pan. Add the pancake dough with the soup spoon.

  5. When the bottom starts to brown, turn it over and repeat. Cook in batches until the dough is gone, add butter each time to prevent the pan from drying out.

For apple cinnamon

  1. In a large saucepan, melt the butter over medium heat. Add apples and cook while stirring occasionally until they start to soften, 4 or 5 minutes.

  2. Add the syrup and cinnamon, stirring to create a coat. Continue cooking until the apple is easily pierced with a fork, for another minute.

  3. Serve warm on pancakes with added maple syrup, if desired.
