Easy Shrimp Tacos (with Lime Chipotle Mayo)


I used to think I didn’t like shrimp pancakes! You know when you have a dish that you never order or make because you * think it’s not for you? Very quickly when we were in Mexico, a friend ordered everyone’s food, and the final shrimp pancake was laid out on the table to share. I was hungry so I put aside all my previous judgments and dug into… and guess what, it was so cool!?!

So I asked how they are made and the answer is simply “soy sauce”. I said, “Just soy sauce? Is that it? ”Who knew shrimp pancakes could be so delicious and easy!

They are also topped with a chipotle mayo, which I am talking about here, but if you can’t find a clean “food” mayo, I think sour cream would be a good alternative. Enjoy! 🙂

Ingredient

For Shrimps & Vegetables

  • first tbsp toasted sesame oil
  • 1/2 onion, thinly sliced
  • 2 Bell pepper, (any color), seed removed, shredded and sliced
  • first pound shrimp, Peel, dig deep, and pat dry
  • 1/4 the cup flour
  • 2 tbsp olive oil
  • 2 tbsp I’m willow
  • 1/4 teaspoon Crushed red pepper

For Lime Chipotle Mayo

  • 1/2 the cup mayo , (You can remove sour cream if you cannot find clean mayo)
  • first chipotle chile, from a can of chili chipotle with adobo sauce
  • first teaspoon spicy sauce, from the same can of chili
  • 2 teaspoon lemon juice

Recommended attachments

  • 8 Corn cake, buy in the store or make it yourself
  • twelfth oz Fresh cheese shredded, (cheese, possibly sub Monterey Jack)
  • Lime Chipotle Mayo
  • Cilantro

Tutorial

For Shrimps & Vegetables

  1. Heat sesame oil in a large saucepan over medium heat. Add onion and chili to the pan and cook, stirring occasionally until tender, about 6 to 7 minutes. Meanwhile, coat the shrimp in the flour.

  2. When the vegetables are ready, switch to one side of the pan to create a space, then add olive oil to the pan together with the coated shrimp. Cook until the prawns roll, turn pink on the inside and golden brown on the outside, and have cooked (firm) within 4 to 5 minutes.

  3. Sprinkle the soy sauce and red chili on top until evenly covered and served on a plate.

Assembling tacos

  1. Microwave the cake to soften (if purchased at the store). Add shrimp and vegetables, then topped with cheese, Lime Chipotle Mayo and cilantro.
