I was haunted by the seedless, gluten-free hearts of the palm noodles I used in place of the pasta in this stir fry. They are very healthy – you’re eating a large bowl of vegetables! Much better than that zoodles because they are not runny and have a texture similar to pasta. I have made this vegetarian dish for lunch a few times already! Made with spicy, greasy soy sauce and an extra egg for protein. With eggs, peanut butter and spinach, the entire dish has about 17 grams of protein and comes together in less than 15 minutes. I finally got some Palmini linguine affil links (noodles made from the heart of the palm of the hand), which I constantly hear about on social media. To be honest, I was hesitant to try them, but when I unpacked and tasted them, nothing was terrifying. Palmini basically tastes like the heart of the palm of the hand, which I grew up eating. How to make spicy peanut fried noodles for good health

This healthy stir-fry serves one dish and is great when you need a quick home lunch. You can easily double or triple this recipe if you need to feed more people or want leftovers.

  • Cook garlic and ginger for 30 seconds, palms in noodles, then soy sauce and sriracha.
  • Add spinach and cook until it wilt.
  • Push everything aside and put the peanut butter in the pan. Let it melt, then stir well into the pasta mixture.
  • Smash the egg and scramble for it.
  • To serve, top with extra sriracha, sesame seeds and scallions.

Variations:

  • If Palmini is not available, you can sub zucchini or vegetarian noodles for other low-carb alternatives or cooked rice noodles.
  • For more protein, use two eggs or add a pinch of tofu, tofu or chicken.
  • Feel free to add vegetables like broccoli or bell peppers.
  • To make this stir-fry gluten-free, swap the soy sauce for tamari or coconut aminos.
  • Switch peanut butter to sun butter if you want a seed-free stir fry.
  • If you don’t like it hot, skip the sriracha.

  • In a large non-stick pan, heat 1/2 tablespoon of oil, add garlic and ginger and cook until fragrant for 30 seconds.

  • Add the heart of the palm noodles and stir well.

  • Add 1 tablespoon soy sauce, sriracha, and stir for 1 minute, add spinach and cook until wilted, 2-3 minutes then set aside.

  • Add peanut butter to the other side and let until melted, about 30 seconds then mix all together.

  • Push everything aside.

  • Add the rest of the oil on the other side and beat the eggs, stirring then mix all together.

  • Transfer to a bowl, top with sriracha, sesame seeds and scallions.
